Spicy Quinoa and Black Bean Salad

Ingredients:
- 1 cup of quinoa
- 2 cups of water
- 1 can (15 oz) of black beans, rinsed and drained
- 1 medium bell pepper, diced
- 1 small red onion, diced
- 1 avocado, diced
- 2 tablespoons of olive oil
- 1 tablespoon of lime juice
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste

Instructions:
- Rinse the quinoa under cold water and drain.
- In a pot, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 12 minutes, or until the water is absorbed.
- In a large mixing bowl, combine the cooked quinoa, black beans, diced bell pepper, diced onion, and diced avocado.
- In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or let it chill in the refrigerator for a few minutes before serving.
