Korean BBQ (Samgyeopsal) Recipe – Full Guide

My favorite food is Korean BBQ, especially *Samgyeopsal* ; it is the most ordered dish in Korea and recently gained a following around the world. Simply explained, samgyeopsal refers to slices of pork belly grilled on a tabletop that are supposed to be interactive and social yet savory. Simple yet delectable, it was full of meat flavor with a mix of fresh vegetables, savory dips, and traditional Korean side dishes called banchan.

Ingredients for Samgyeopsal:

For the Pork Belly:

1)Slices of Pork Belly** - about 0.5–1 cm thick (about 1-2 pounds)

2)Note: You can use other cuts such as pork shoulder or neck, but belly is the most traditional.*

For the Sides and Condiments:

- *Lettuce leaves** - large preferably for wrapping grilled pork

- **Sesame oil** - for dipping

- **Salt and pepper** - to season the pork

- **Garlic cloves** - thinly sliced

- **Ssamjang** (thick spicy paste made from soybean paste and chili paste)

- **Gochujang** (Korean chili paste, for extra spice, optional)

- **Kimchi** (fermented vegetables, usually napa cabbage, radish, etc.)

- **Pickled vegetables** (like pickled radish or cucumbers)

- **Green onions** (thinly sliced, for garnish)

- **Chili peppers** (thinly sliced, for extra heat, optional)

- **Rice** (steamed white rice, usually served on the side)

How to Make Samgyeopsal (Korean BBQ)

Step 1: Prepare the Ingredients

1. **Pork belly:** Cut the pork belly into bite-sized strips, thin enough to get cooked in an instant on the grill. You could just purchase pre-sliced pork belly from an Asian market.

2. **Vegetables:** Rinse and dry the leaves of lettuce. Slice garlic cloves into thin pieces. Prepare your side dishes with kimchi or pickled radish.

3. **Ssamjang**: This could be store-bought from an Asian grocery store, but one may make a quick approximation using equal amounts of the **doenjang** or fermented soybean paste, **gochujang** or chili paste, garlic, sesame oil, and to taste sugar.

Step 2: Grill or Griddle Setup

At-home cooking works well with either a tabletop grill or a portable gas grill, although cooking it well can be done using a large griddle or large cast-iron pan.

- Heat the grill until it reaches a medium-high heat.

- Lightly brush the grill with some vegetable oil to avoid sticking of meat.

Step 3: Grill the Pork Belly

1. Place slices of pork belly on the hot grill, and let them cook for 3-5 minutes on each side until crispy and golden brown. The fat from the pork will start to render, and the slices must be sizzling.

2. **Important Tip**: Do not overcrowd the grill; give each piece some space to cook evenly. The goal is to get the pork crispy and flavorful, not greasy.

Step 4: Prepare the Lettuce Wraps

- While the pork is cooking, grab the lettuce leaves and prepare your dipping condiments. You’ll need a plate for each guest to build their own wraps.

Step 5: Assemble the Wraps

Wrap a slice of cooked pork belly in a lettuce leaf, then add slices of garlic, a dollop of ssamjang, a piece of kimchi or other pickled vegetables, and any optional toppings, such as sliced green onions or chili peppers. Wrap the lettuce around fillings to make "wraps" that can be eaten in one bite.

Optional-You can even add a little spoon of steamed rice to the wrap for a good amount of texture added.

Step 6: Consume with Side Dishes

- Traditionally, as the grilled pork belly wraps are enjoyed, they would be consumed alongside other classic Korean banchan (side dishes), such as kimchi and pickled vegetables, sometimes together with a simple bowl of soup (**miyeok-guk**, or a seaweed soup).

Prsentation Ideas:

- Grilled pork belly was served with steamed rice and assorted banchan such as kimchi, pickled radish, and seasoned spinach.

- Beverages: Soju is a Korean distilled liquor, while beer is very popular accompanying the eating of Korean BBQ.

Tips for the Best Korean BBQ Experience

1. **Grill in small batches**: Never overcrowd the grill so that each piece can cook well and get crispy.

2. **Interactive dining**: Korean BBQ is meant to be communal. Have all participate in grilling their pieces of pork and putting together their wraps themselves.

3. **Play with flavors**: Add your twist by including your favorite toppings like sliced cucumber or grilled onions in your wraps.

Conclusion

Samgyeopsal is not only eating but an experience in itself. It gets people together in an interactive, entertaining way of meal-sharing. Be it dining with friends, family, or even alone, Korean BBQ presents a unique and satisfying flavor sensation with every single bite. No doubt, the worldwide sensation it is today, it combines crispy savory pork, fresh vegetables, and spicy condiments.

Savor cooking it at home and sharing with others the joy of grilling, wrapping, and consuming this succulent meal.
