Ingredients:

  • 1 cup of quinoa
  • 2 cups of water
  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 medium bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, diced
  • 2 tablespoons of olive oil
  • 1 tablespoon of lime juice
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste

Instructions:

  • Rinse the quinoa under cold water and drain.
  • In a pot, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 12 minutes, or until the water is absorbed.
  • In a large mixing bowl, combine the cooked quinoa, black beans, diced bell pepper, diced onion, and diced avocado.
  • In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
