Quick Dairy-Free Vegetable Biriyani

Ingredients:
- 1 cup of basmati rice
- 2 cups of water
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 1 medium onion, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 2 tablespoons of biryani spice mix
- 2 tablespoons of vegetable oil
- Salt to taste
- Fresh cilantro for garnish

Instructions:
- Heat the vegetable oil in a pot over medium heat.
- Add the sliced onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the mixed vegetables and sauté for a few minutes until they are slightly tender.
- Stir in the biryani spice mix and cook for an additional minute to release the flavors.
- Add the basmati rice and water to the pot, then season with salt to taste.
- Bring to a boil, then cover the pot and reduce the heat to low, cooking for about 10 minutes or until the rice is done and water is absorbed.
- Fluff the biriyani with a fork and garnish with fresh cilantro before serving.
