Ingredients:

  • 150g of whole wheat pasta
  • 1 can (400g) of black beans, rinsed and drained
  • 1 medium bell pepper, diced
  • 1 small red onion, finely chopped
  • 100g of cherry tomatoes, halved
  • 30g of fresh cilantro, chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of lime juice
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Kitchen Tools Needed:

  • knife
  • cutting board

Instructions:

  • Cook the whole wheat pasta according to package instructions until al dente, then drain using a colander and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the rinsed black beans, diced bell pepper, chopped red onion, halved cherry tomatoes, and chopped cilantro.
  • In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper to create a dressing.
  • Add the cooked pasta to the mixing bowl with the vegetables and black beans, then pour the dressing over the top.
  • Toss everything together until well combined. Adjust seasoning if necessary and serve cold.
