Creamy Seafood Bisque

Ingredients:

  • 200g of mixed seafood (shrimp, mussels, and calamari)
  • 250ml of coconut milk
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 medium tomato, chopped
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions:

  • In a saucepan, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until soft and fragrant.
  • Stir in the chopped tomato, smoked paprika, and cayenne pepper, cooking for another 2 minutes.
  • Add the mixed seafood to the saucepan and cook for about 3-4 minutes until they are just cooked through.
  • Pour in the coconut milk and bring the mixture to a gentle simmer.
  • Blend the mixture until smooth using a blender. If you prefer a chunkier texture, blend half and leave half intact.
  • Return the bisque to the saucepan and heat through for an additional 2 minutes, seasoning with salt to taste.
  • Serve the bisque hot, garnished with fresh parsley.
