Lemon Herb Quinoa Bowl

Ingredients:
- 150g of quinoa
- 500ml of vegetable broth
- 1 medium cucumber, diced
- 200g of cherry tomatoes, halved
- 1 small red onion, finely chopped
- 50g of fresh parsley, chopped
- 50ml of lemon juice
- 30ml of olive oil
- Salt to taste
- Pepper to taste

Instructions:
- Rinse the quinoa under cold water for about 2 minutes.
- In a saucepan, bring the vegetable broth to a boil and add the quinoa.
- Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and liquid is absorbed.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and fresh parsley.
- Add the cooked quinoa to the bowl and stir to combine all ingredients.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently to coat.
- Serve the quinoa bowl in individual serving bowls.
