Ingredients:

  • 150g of quinoa
  • 500ml of vegetable broth
  • 1 medium cucumber, diced
  • 200g of cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 50g of fresh parsley, chopped
  • 50ml of lemon juice
  • 30ml of olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  • Rinse the quinoa under cold water for about 2 minutes.
